How do we add custom categories to the LOV for 'Category' on Supporting Documents?

Summary of the question:

We want to have a “Roster” document category that we could report on, to see contracts that do and don’t have “Roster” attached. Trusting user to use an exact phrase in "Title" field is not optimal and prone to error.
