How to create user variables and customize contract template?

Hello,
I am trying to find some documentation on how to
1. create procurement contract user variables (PO_HEADERS_ALL descriptive flexfields and items list)
2. customize contracts template.

Unfortunately, there is not enough information in metalink so it would be great if you help me on this.
