Is there a way to override Sales Cat Code values (SRP1, SRP2...) on Sales Order Detail lines created

Yes, but 'override' is not what you are doing if it is non stock. You are 'supplying' a Cat Code, that will be stored in the F4211, F42119,F42199. It would be an 'override', if it were an inventory item, and that is also very acceptable. In the case of inventory items it does not go back and update the Branch Plant record. A very common example of overriding Cat Codes in Distribution is the Landed Cost Code 'PRP5' in Purchase Order Entry. It comes in based on your rules, but for that order you may want to change to a differnt Landed Cost code. The software allows this practice.
Some of my ex clients even went so far as to not populate the SRP codes in the Branch Plant record, and eliminated the blanks from the UDC tables, so it would force the users to enter an SRP code in Sales Order entry, based on some criteria, who it was being shipped to and so on.
