item fulfillment search on initial fulfillment

I'm trying to create a service-level search/report...which is how well we're able to serve our customer's needs when they order.

For example, suppose a customer orders 5 items and we have 4 in-stock and I can go ahead and fulfill those initially. I may eventually fulfill the 5th item, but my initial service level is 80% (i.e. fulfilled 4 of the 5 items). How can I capture that?
