Flow to select a default substitute item

Hello,

We have a lot of generic items and we are using item substitution. Our sales orders are created in Woo and imported into NetSuite via Celigo. I would need some sort of a flow that would work like this:

When a sales order is created (can be right after it is created)

If a line item has substitute items

Select one of the substitute items for that item if it is in stock

End

How can I ago about this in NetSuite?
