Fill rate custom field

Good morning!

We are a clothing supplier and i'm looking to create a custom field that would apply to each sales order that would be calculated by summing the QTY ordered and the QTY Committed then running a calculation of QTY Committed/QTY ordered to give me a potential "fill rate" that i could display under the Primary Information tab on the sales order screen. I would also like to be able to call this field on the Fulfill Orders screen so when we are doing bulk orders we can ensure we have a higher than 50% fill rate and fill or hold
