Workflow to set Do Not Commit on all lines

My Sales Team is asking for a Workflow to set all lines on a sales order for Direct Shipments to Do Not Commit on create. They will then come back later and commit items. I tried using the Items Sublist Action Group but am unable to see the Commit field on the line of the SO to set the field value. Does anyone have any ideas on how to accomplish this? Appreciate any guidance. 😊
