Purchase Cartons but sell each, how can stock roll down to an Each Inventory count?

Hi All,

I'm trying to set up basic inventory management for a retail business that purchases cartons over various units of measure but sell in each. Therefore for ordering they would like to know the sale units they have on hand.

A particular case is Chupa Chup Lollipops, they are sold by each but can be purchased in 500 or 1000 boxes, with each having a different barcode for sales and stocktake.

My first thought was to set up the sale Item as an Inventory Item with Purchase UOM of 1 and call it CC1. This item aligns with the POS systems's SKU and I will decrement it's SOH figure for daily sales per location.
