System Notes for 'Send Transactions Via'

Hello,

We notice that on Customer Record in 'Preferences' tab, there is a field 'Send Transactions Via' with options (Email, Print, Fax). This field change is not available in System Notes (to review any values changed). Is this a system limitation and if it is there a workaround?
