What good is the pageInit client script?

I've had a lot of issues trying to make my scripts work with page init.  What I would like to do is that when a specific custom task form shows up, a lot of the fields will be defaulted to certain values.  So far, it seems that anything that is automatically defaulted by the system, in my case "start date" and "due date" will overwrite what I initially wanted in there since it seems these values populate after the page init.  Can someone clarify a little bit on exactly how page init is suppose to work and if it is
