How Do You Edit Departments on Fulfilments

Hi,

Does anyone know how to edit the department against a fulfilment transaction? We've changed the estimate, sales order and invoice but can't see how to change a fulfilment's department. We use departments as cost centres to track GP so if a mistake is make before the fulfilment process we'd like to be able to correct it.
