Is it possible to assign a shipping cost per a particular item?

I have read several posts about not being able to set accurate shipping rates.

I may not have done enough research and didn't see any posts specifically regarding my next question, but I am wondering about perhaps assigning a certain shipping cost to an item.

For example, we have a low general flat rate shipping cost for most items.  But some of our heavier items are costing us over $20.00 to ship, while the customer pays only $4.50.

Is there a way to assign a particular shipping cost to a particular item? Or assign a special handling charge to a particular item?
