Fulfillment Data to Sales Order

Why is it I can not capture any information at the fulfillment stage and then have it update the sales order. This is basic stuff like the OEM serial numbers that are only pulled at fulfillment then have that data flow back to the sales order. The shipping data flows back from Pacejet to the sales order, why can't I create a field that does the same?
