Need to Customize our Sales order form, Help!

My Company is about to Switch all our business practices over to netsuite and we need to Customize Some forms, including our Sales order form.
We Sell imported food wholesale and retail by phone and Via Website.
We have Netsuite Small business w/ the Extra shipping module.

I have attempted to do this via sales order/custom>> but Do not see the correct way to Add/ Remove these line items

I want to Add our Item # in front of the item column, currently the display name is in the Item column.
also is there a way to Add how the item will be shipped, currently it will say "UPS", but I need it to show "UPS Ground" or " UPS 2 day" etc...(show full shipping method?)
