Item sublist default behavior - Sales Orders in particular

I've lost my mind! :-)

On a Sales Order form, the Item sublist can have two behaviors.
1) A simple drop down box that lists the items
2) A type ahead list where one can enter "widget" and the items starting with widget will display. Also the user can use List or Search

How does one change the behavior to #2 from #1?
