Default Shipping update on already created customer

Hi Gurus,

On our customer record there is a field for shipping carrier and shipping method. under preferences tab.

We have to change our Default shipping from FedEx to UPS; but the customer records created before this week did not change. I tried to do CSV upload but the Shipping Carrier is not in the mapping section. tried different options too. Can you please help us in here?
