Workflow to check DECLARED VALUE and DELIVERY CONFIRMATION on Item fulfillment

Hi All,

I was trying to check Declared value when the total amount is greater than $200 and Delivery confirmation to signature required if the total amount is greater than $500. But I was not able to find these two fields in workflow actions -> Set Field value. How can I select these fields and set values using workflow.
