Emailed Records Sending to Admins

This is a new one on me.

Occasionally, I've been receiving random invoices, POs, etc. emailed from folks to other parties (customers, vendors, etc.). When I look under communication, it looks like the original email went out and no record of the copy being CCed to the admins is registered.

Is this a setting I don't know about?

These are not bounced or undelivered emails, either. Assuming the recipient is getting them.
