Set Shipping Carrier via Workflow

We have UPS set are the Company Default Shipping Method. For our German Company I have a workflow that sets fields when they create new customers and need this to set to More. I am unable to find the Shipping Carrier field. Does anyone know of a way I am able to update this field in the workflow? I also am not able to find this field when trying to update current customers via a CSV import. Thanks for any help
