How to copy value from Project to Sales Order Custom List/Record Field?

On a Project form I've created a custom field X. This field X is a list/record field that displays the values from list X.
On the Sales Order form I've created a custom field Y. This field Y is a list/record field that also displays the values from list X.
I would like to create a Workflow; When I click on 'New Sales Order' within the Project form, a New Sales order form is displayed. When the Sales Order form is loading, the workflow should copy the value from the project field X to the Sales Order field Y. When the Sales Order form is loaded, it should still be possible to adjust the value of field Y with another value of list X.
