Why is Electronic File Transfer - File Generation slow?

My users are experiencing intermittent timing delays when trying to generate EFT Payment files. Some days (and also at a certain time in the day) they generate quite quickly, and other days they take more than say 10 minutes- sometimes they can take 1+ hours.

Is anyone else experiencing this and if so, what workarounds or improvements can I make in order to ensure that the file generation is processed in good time.
