Why is a Custom Field missing from the Field Mapping screen when doing CSV Imports?

I have been searching for the way to import a custom field, but I cannot find it when using the Import Assistant.

The field exists - it is custom and I can even put it in the search bar and get a list.

When I attempt using the Import Assistant, I see all the import fields, but the field I need to migrate to is not in ANY of the lists.

Any clues?
