Using a workflow to hide certain Sales Order fields

Hello, I am currently using a workflow to set the line fields on a Sales order to disabled based on a few criteria (user role, SO status and a custom checkbox value).

I have been able to get it working for most line fields but I am not able to do it for the below fields as they do not show as a sublist field to choose from when building the workflow.

Price Level

Tax Code

Tax Amount

Gross Amount

Another field I have a problem with is the Price (rate), that one does show as an option in the workflow but it does not seem to work:
