Percent Complete Project Revenue, and how to correct period and %completione

Hi Gurus,

We're using Percent Complete Project Revenue Recognization using (use Percent Complete Override for Forecasting) as picture below:

I needed to define %complete (100%) in advance at the start of every project. So, I would like to ask the correct process or practices on how to add more %completion and postpone/edit specific period on the completion (100%) of this project
