How can I use Proposal Status Field on Workflow?

I am wanting to use the "Status" field on our proposal to create a workflow for approvals. I do not see the "status" field as an option when I try to create a new action. I've looked for "status", "entity status" and I can't find this field. I know the options have to be added by going to setup>sales>customer statuses, but how do I use this field for triggers in a workflow?
