How to Store the values of the Average Cost in a Custom Field?

We need visibility to our average cost for items even when inventory values have dropped to 0. Is it possible to create a custom field to store the average cost value at the item leve?

Is it also possible to update the stored value when the average cost stored is no longer equal to the current average cost, but only if the value is not 0?
