Why can't i see all fields under workflow action parameters?

Hello, i need a workflow to take data from one field and put it in another. should be a simple workflow setup, but when i go to "from field - Field" the fields i need are not listed. i am also ok if with using a formula but i have not used one yet and could use help setting the first one and i should be able to just edit the field name/id to make it work with others i need to set…

Record type = Item (inventory Part)

putting data into field - UPC Code / upccode

Pulling data from field - Item Name/Number / itemid
