Where can I configure a scheduled bulk processing submission?

I'm trying to edit the parameters of the Invoice Sales Order process which I can see happening each day at 10:00 in Setup > Company > Bulk Processing Status

Where would the customization for this be? I want to edit things like which field the email is sourced from and when the process runs but can't find where this customization resides.
