Time spent between Workflow States

I'm looking to get a report that will track time spent between workflow states.

I have an approval workflow running on Purchase Orders. I want the report to show me how much time has passed between states. Ex: How long did it take between State = Open to State = Approved?

I want a report that will show the time it took between each Date Entered State. This will help me know how long it's taking for a PO to be approved.

I tried saved search running on System Notes, but I'm not getting at it. I believe workbooks would help but I'm not familiar. I thought of creating fields but fields would be not searchable due to Store Value False. I want to avoid scripts.
