Opportunity with multiple estimates that will convert to sales order

We wanted to track a customer contract Opportunity that could ranged between 1 to 3 years where they order in small batches over the said period.
The issue is when the first estimate of the Opportunity is converted to sales order, the Opportunity's validated status is changed to 'Issued Estimate' and the status is auto changed to 'Closed Won'. The status of all the open linked estimates to this Opportunity is also auto changed to ' processed'. This means all these 'open' linked estimates with most likely as forecast type will not be included in the Standard Pipeline report.
