I believe Oracle Sans UI is used as Default(System) font style in OAC 6.3 Classic, can anyone confirm this? Is there any document available?

I am not sure about OAC. However, we do have a document available for OAS. As both the systems are nearly equal, this should help you.
Also, you can look at the master CSS file of OBIEE via inspect element and that should tell you the default value.

Oracle Sans is the default font with the Redwood theme, now the question is when Redwood theme has been added to OAC.
Based on https://docs.oracle.com/en/cloud/paas/analytics-cloud/acswn/index.html, Redwood was added as an option you could enable in OAC 6.1, while it switched to the default theme in OAC 6.4.
The Alta theme was using (and still does) Helvetica Neue as font.
Therefore I would say OAC 6.3 wasn't using Oracle Sans by default, but it could have been enabled already, it all depends on what theme you were using.
