When clicking on a Dataset, a user expects to open to where the Definition & columns are modified not a workbook. It seems to be UI issue as you expect to edit the Dataset not create a workbook. At least an option to go directly to opening the Definition or column Preparation transformation page instead of opening a blank workbook > Data > Edit (3 clicks just to modify the Dataset).
