I'm trying to have a look at the AI Assistant but even with a searchable (indexed) dataset, I don't get the "Assistant" tab in the insights panel.
Do we need to ask to activate it on an OAC instance ?

See the paragraph on availability:
"The AI Assistant is now available in all regions to customers using large OAC shapes. Over the next several months the AI Assistant will be steadily rolled out to all OAC customers. The AI Assistant will eventually be available to all OAC customers at no additional cost."
Customers with large OAC instance shapes will have access to the feature first.

We are starting to roll out to 10+ OCPUs at first.
We plan to lower that threshold progressively each subsequent releases until we can get it to all customers

i have changed to 10 ocpus and still can not see the options :(
@Fazal Subhan111 The Rollout is ongoing and progressively happening to 10+ ocpu instances. At this time, we are working through the backlog of existing instances. Your instance was added to the list will get updated in the order it was added to the list.
