We do not have permissions setting at canvas level. You can submit a Idea Lab request for PMs to evaluate this ask.

Hi @User_A63N1, you can change the interactivity options for each canvas in the Present mode but as far as I am aware there is no option to secure each canvas separately as this is set at a workbook level.
