Change Output for Insight Reporting

I'm trying to use insight reporting to push out scheduled reports to the folks responsible for our compliance training. However, the fields in the course report (Course, username, percent complete, start/complete date, score, status) aren't sufficient. I also need first name, last name, dept, etc. Is there a way to change the output or add additional fields?
