Yearly Compliance Reporting

We have yearly courses that we want to report on for 'who has and has not' completed.  These courses will be ILTs and CBTs.  We want to have custom fields included in the report form the user properties.  We can find the completed by using the Learn Center report.  But when we uncheck the field for 'mapped users' the report bombs out and gives no results.  We would like to use the Insight reports but I do not know how to include the 'custom fields'.  Any suggestions, help or report that someone has already built would be wonderful.  Thanks so much.
