Onboarding/Transitions not updating Email Address

We've had a couple instances where we've updated the email address of a candidate prior to initiating an onboarding task, but the task notification email appears to still be sent to the original email address.
Several candidates have mentioned not receiving task notifications when we've reached out to them. Upon review of the onboarding task, the email address in the General Information section of the task still shows the original email, even though the address was updated before the task was initiated. Is there a way to manually update/correct an existing task's email address or otherwise refresh the field so that the new email address is used for future tasks?
