How to collect other personal details?

Hello,
There are some fields which naturally you wouldn't ask a candidate when applying for a role, but once they have accepted a job we need to collect, preferrably before converting the pending worker into an employee e.g.
- Gender
- DOB
- NI Number
What is the best method for this?
We have not tested the onboarding module yet, but is this where other customer collect this information? If it is optional, there is a big risk the employee will not fill this out,
For onboarding to start, do we need to have converted the employee from a pending worker to employee to create their HCM account?
