How can I view the BPM Payload for a specific Composite Instance?

I want to make an Approval Rule using one of the available date fields.  I need to view the payload of an instance so I can determine which date field I want to use.

The composite I'm working with is HcmEmploymentTerminationsComposite, but this question is generic for any BPM instance.
