Custom Alerts | Brackets appearing around links

I've created a custom alert that's triggered when a user enrolls in an ILT/VILT course that contains date/time/meeting link/calendar invite etc. The problem I am facing is that in the message to the learner the data is displayed inside brackets [ ] so the links aren't live (and it just looks bad - see attachments). I am trying to figure out how to get the data to display in the email/notification to the learner without brackets around the data.
