Personalisation of Offering Start Date field in the Learning catalog

Business case needs that post consuming the ILT content , learner is  required to take up an assessment starting at a  specific start date and Time . Now we have the Offering start date provided only. I was trying to do some personalisation on the Offering Start date field in order to include start time as well( Like we have in scheduled process area) . Can some one please help me on that.
