Visibility of Edits done in the in-flight workflow

Trying to see how to handle the below use case from SOX compliance / Auditing perspective:

Visibility of audit trail in case one of the approvers (say Manager or HR specialist) edits the transaction request submitted via ESS or MSS. Ideally, the ask is to record what data has been changed (i.e. former data and the final data changed by the approver).

The delivered Audit functionality (if enabled) seems to record the final data committed to the database after all approvals are complete, but still with the initiator’s name against the data change. I am not able to find any place (either in audits or transaction notification) wherein it provide the details of these ‘in-flight edits’.
