Moving from Classic to Responsive Approvals for New hires

Hi,
We have recently updated our hire screens to responsive by enabling the responsive screens in structure and disabling the classic.
On reverted the changes in structure to further test the classic approval, we are still seeing the responsive approval fire from the classic workflow.
Can I ask if any other users have seen this and if so, if you know what controls which type of approval is fired?
The level of information including in the responsive approval is a lot less than the detail of that included in classic. We are working on adding further detail to our responsive approval but have not yet worked out why they are different. Any other information on this would also be really useful.
