Can you use Extra Info Post Offer?

Summary:

I have put a Person EIT in the Extra Info area on candidate application for our teams to add in agreed start date, however once candidate has been offered and accepted and move to HR Phase the option to edit disappears. Does anyone know if its possible to use Person/ Application EIT post offer?
