Refresh Point on PROD to Test

Summary:

We currently have a refresh running from our PROD to Dev environment with about 8-9 hours to go. I need to understand, if we need to make changes in our PROD environment while the refresh is still running, will it capture those changes? Or is the refresh point really when the refresh started and we can proceed making updates in Prod after the refresh has started? We do not want it to capture those changes so need to understand if we have to wait until the refresh is running. Thank you!
