Redwood hire a person screen - address defaults to US

When using the Redwood "Hire a Person" flow, the address page defaults to US format even though the organisation is in the UK


Content (please ensure you mask any confidential information):

As far as I can see, we have set everything in the environment to be UK, including person regional preferences, but the Redwood Hire an Employee flow still defaults to asking for a US address. We can change it to GB format, but why is it defaulting to US? What setting should be controlling that?
