Learning Assignment Status in 'In Progress' status rather than 'Not Started'

Hello,

I am facing issues with the Assignment Statuses for few Courses. I am working on a client's issue regarding the same.

When self-enrolling into few courses, one course assignment status is 'Not Started' which is expected but for another it's directly 'In Progress' without doing anything on it yet.

For another course, I did not select the Offering yet, so the initial assignment status should be 'No Offering Selected' but it's directly showing 'Not Started'. And finally, for few Courses, after enrolling it's directly showing 'Completed'.

I compared the courses and offerings, checked the configuration but couldn't figure out what the issue is. Please help if anyone faced this issue before and/or know anything to fix this.
