FYI Assignees for Document of Record Workflow from DFF

I've configured a Descriptive Flexfield (DFF) on my Document of Record, and users will enter a specific (Person Number/Username) into one of the DFF segments.
My goal is to use this DFF value as the assignee for an FYI notification within the DOR approval workflow.

Any examples or best practices would be greatly appreciated!
