How to ensure that new commerce attributes get added to both JET UI and Redwood UI until we are ready to disable the JET UI (at least a year away) ?

In the "Customize View" area, it seems it's not possible to see list of Available Attributes. This can only be seen in "Customize Section". We have some views that have > 10 sections. The list of available attributes for a particular section includes all attributes not in that section - it includes attributes in other sections in same view if they are not in the current section. (As we can now display same attribute in more than 1 section.) So, it's a lot of work to determine if a given attribute is not in the
