Contract Owner showing middle name even if person records was updated

When searching for the Contract Owner in Manage Contracts, it shows First Name, Middle Name and Last Name. We don't want the middle name to show.

So:

1. We asked the user to delete the middle name in the person information, ran the process
2. Apply Name Formats to Person Names
3. I've also disabled the Middle Name in Manage Person Name Styles

However, the middle name is still showing even if the person record has been updated. Am I missing something?
